no bake vegan mince pies

These taste so fresh and delicious they're worth a try (though I say so myself!). I know technically they're not pies as they don't have a top, but you could add a top if you wanted. I didn't call them mince tarts as the search engines wouldn't find them. Yes we're all slaves to search engines these days, ho hum.


The base/pastry for this recipe can be used as the base for raw cheesecake or even a topper for a no bake version of my fruit cobbler. And it's easy peasey to make, you just need a food processor to grind everything up.


So no more talking, get into the kitchen and give these flavour bombs a go...

ingredients

  • 1 cup almonds
  • 1 cup dates
  • 1 medium peeled and chopped raw beetroot
  • 1/2 cup soaked prunes
  • 1/2 cup raisins and or sultanas
  • 1/4 cup chopped almonds or any other nut you fancy
  • 1 tspn cinnamon
  • a few drops vanilla essence
  • Agave syrup to taste (or stevia)

a note about agave syrup or stevia

I used to use stevia as it grows locally, I could even grow it in my garden if I wanted. But the taste of stevia is, well, just not to my taste. So I use agave syrup if I'm being vegan or honey if not.

The dates, prunes, cinnamon, raisins and sultanas add a lot of sweetness so adding extra is really a matter of taste, it's up to you if, what and how much.

no ghost towns around here please

Posting online can feel like a bit of a ghost town sometimes, like I'm talking to myself. Which is why I'd love to hear how you got on with these, maybe even see a pic or two of what you made. It'll spur me into sharing all the other goodies I come up with in the kitchen xx
